
Here’s my latest baking recipe, Butterscotch & Cream Cheese Brownies, right before they hit the oven; so pretty don’t you think?
I just love brownies and I’ve tried loads of different recipes; some good, some amazing and some downright dreadful but there’s nothing like the satisfaction of creating your own recipe and it working out perfectly. That’s what happened today, they’re gooey, moist and chewy, not too sweet and slightly crisp on the top; my idea of a perfect brownie.
I’ve had a busy day baking for up and coming blog challenges and getting them all blogged and saved ready for future publication but when I’d finished that I didn’t want to rest, I wanted to get baking again. Brownies were the perfect option, easy, hassle free and quick, so I began to jot a few notes down about flavour combinations and that’s when it struck me how good cream cheese could be in brownies, combined with the butterscotch chips I’d got hidden at the back of my chocolate cupboard that would be brownie heaven.
The only problem with them is that they’re so hard to resist, I doubt there’ll be any left by morning unfortunately and here I was planning to spoil my work colleagues.
The Recipe:
- 250g cream cheese
- 2 tablespoons plain flour
- 2 tablespoon icing sugar
- 1 egg
- 100g butter
- 250g butterscotch chips
- 150g caramel filled chocolate
- 350g plain flour
- 100g cocoa
- 2 teaspoons baking powder
- 200g brown sugar
- 4 eggs
- 1 teaspoon vanilla extract
- Combine the cream cheese, one egg, two tablespoons of flour and icing sugar and set aside.
- Heat the butter in deep sauce pan and add the butterscotch, allow to melt, stirring frequently.
- Remove from the heat and add the brown sugar, mix well.
- Add the chocolate and allow to melt.
- Allow to cool slightly before beating in the eggs.
- Add the flour, cocoa and vanilla, mix well and pour into a greased & lined brownie tray.
- Place the cream cheese on top of the brownie mix in spoonfuls and swirl using a cocktail stick.
- Bake at 180′C for 25-30 minutes until just set and a skewer still has some sticky brownie mix on when inserted, be careful not to over bake.
