Birthday Boy

in Cakes & Cookies,Chat

It was my beloved Murphy’s 1st birthday yesterday; I just can’t believe where the time has gone. It doesn’t feel like eight months since the cheeky faced little eight week old puppy entered our lives.

He’s certainly grown a lot since then and is now starting to get his handsome ‘adult’ look, although he’s still only a puppy, just a big one :)

I’m so overjoyed we brought him home to us, he brings immense joy and joviality to us all.

So how could I let his birthday go unmarked? I couldn’t. He got so many new toys he didn’t know where to start with them all which unfortunately I think was a little unsettling for him but he soon began the rambunctious play, leaping round the garden, throwing his toys and playing catch and ‘raggy’ with us – so much fun for me and Murph.

I didn’t have time to bake anything for him yesterday so have done so this morning – apple & banana muffins from Woofing it Down by Patricia O’Grady.  I had to make adaptations to the recipe due to Murphys gluten intolerance but they still went down a treat.

was intending to take a picture of Murphy with a cake but in true Setter style he ran off with it before I could press click.  Oh well at least it shows he likes them :D

The Recipe:

  • 3 cups whole wheat flour (I used gluten free white flour)
  • 2 cups water
  • 2 ripe bananas
  • 1 apple diced
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla
  • 1 egg
  • 2 teaspoons peanut butter (unsalted)
  • 1/4 teaspoon cinnamon (I omitted this)
  1. Preheat the oven to 350F or the equivalent.
  2. Beat all the ingredients (minus diced apple) together until well blended.
  3. Fold through the apple and pour into cupcake pans.
  4. Bake for 20 minutes.
  5. Allow to cool and top with cream cheese if wished.
