Healthy and delicious is a great combination isn’t it? All the pleasures of eating with absolutely no guilt. Tonight we had one of those kind of meals – Brown Rice with Beetroot and Feta Cheese.

I love the flavour of brown rice, the extra give in the bite and the nuttiness it has. You feel it is doing you good as you eat
Along with beetroot which is rather a super food I couldn’t really go wrong.
What a lovely colour the rice went too, with the juices from the beetroot dying it a hot pink.
The feta was I suppose a little bit naughty but not really as it’s pretty low fat for dairy produce.
There is no recipe as such, just some roasted beetroot cubes tossed through cooked brown rice with a little feta cheese and basil leaves scattered over. Dressed with good Greek olive oil and a little red wine vinegar. Extra or different vegetables could be used depending on what you have available and personal preference of course.

Yum, we had something similar but with amaranth and oranges. Beets really make you feel healthy.
